Tonkotsu have now opened 7 ramen restaurant and bar locations: 6 in Central London and 1 within the Selfridges Foodhall in the Birmingham Bullring.
The Tonkotsu ramen kitchen in Notting Hill uses a clever open kitchen design concept by Blenheim Design in Brighton. Much of the foodservice equipment is exposed and easily accessible to the chefs. Like in all restaurants, where space is a premium, it requires specialist kitchen installation planning to be carried out and innovative ways to fit all the fridges, cookers, griddle and boilers into a small space, yet still allowing for good performance, function and flow from the chefs. Creating a commercial catering work space that really works is a collaboration between the caterer, design, structural work, build, equipment supply, installation and project management.
The ramen kitchen equipment list, of leading kitchen equipment brands, consists of many stock pot ranges and stock pots in varying sizes for the broths, range ovens, a pasta and noodle boiler with individual baskets, various fryers and mixers. Ken Yamada, co-founder of Tonkotsu ramen group say they pride themselves in making their own authentic ramen noodles for the Japanese ramen dishes and the customer reviews prove the restaurants are some of the best-loved ramen bars in London.
